You can use wood chips a couple of ways;

• Simply sprinkle on to hot charcoals (they burn away quite quickly using this method)
• Seal in an aluminium tray (like a traditional takeaway food box), making a few holes in the lid for the smoke to escape

Jack Daniels wood produces a nice mix of vanilla and caramel smoke.
